I think this calls for a ice cold drink of freshly made rhubarb juice followed by a 20 minute leisurely walk!Rhubarb Juice
Pull rhubarb from your backyard which is planted at the end of your downspouts (as an automatic water system), break off the leaf, wash and cut in 2 inch slices. Fill rhubarb within 2-3 inches of the top of large pots (not aluminum). In another pot, bring enough water to boil to cover the rhubarb in the first pot. When it boils, carefully pour over rhubarb and place cover over the rhubarb and hot water. Leave overnight.
In the morning, pour off the juice (keeping the rhubarb) into a large pot. Bring it to a boil and add enough sugar to sweeten to your liking and boil for 10 minutes for the juice to fully melt and absorb the sugar.
At this point you can pour the juice into sterilized jars and put away for winter, or you can leave to cool. Pour the juice into sealers or juice jug and refrigerate. It is nice to pour some into ice cube containers too.
This is rhubarb concentrate. You may drink as is, add water to have more of a flavored water drink. You can just add 3-4 rhubarb ice cubes to a glass of Ginger-ale for a sparkly summer drink.
Rhubarb juice is great hot on a rainy or snowy day or ice cold on a smoking hot day. There is nothing better than a cup of hot rhubarb juice on frigid January days, to remind you that spring will come again and gardening weather will be back in a matter of a few short months.
The challenge... Try making some fresh juice this summer; if not rhubarb, try peach or nectarine.
